Inside Nate's: Lyons' Homemade Granola

Sometimes you just need a light, fruity pick-me-up to get your day started off right. Our homemade Granola & Fruit Parfait does just that - and makes you feel a little naughty because it's so delightfully delicious!
Served every morning for breakfast with a mélange of fresh fruit and our Simply Perfect Yogurt Sauce, this sweet treat is one of our most popular dishes at the Mansion. So wouldn't it be rude of us not to share the recipe?
Combine in a very large bowl:
42 ounce box of Old Fashioned rolled oats
1 cup sunflower meats, salted is fine
2 cups whole almonds
2 cups pecan halves
2 cups English walnut or black walnut pieces

In a sauce pan combine and bring to a boil:
1 cup vegetable oil
1 cup brown sugar
1 cup pure honey
1 cup Grandma’s unsulphured molasses Original flavor
2-4 tablespoons Real vanilla
2 tablespoons allspice
2 tablespoons nutmeg
2 tablespoons cinnamon
1 teaspoon salt
Remove from heat to cool slightly, then add:
¼ Cup Grand Marnier

Pour the warm syrup over the nuts and oats and mix well to coat each morsel. Spoon out on a greased cookie sheet with sides. Flatten the mixture to about ½ inch thick. Bake 325 for 25 minutes STIR EVERY 5 MINUTES!!
At the end of the baking Granola starts to turn a dark caramel brown. If it doesn’t bake to that color, it stays sticky and we have been known to bake a second time for good measure. Remove from pans leaving it in big chunks. Cool on waxed paper. Store in sealed ziplock bags. Excellent to freeze.
